Glut of Apples?


When you have a glut of apples this is the recipe that makes most sense - great for Xmas gift in gorgeous jars - Just like Jam really with a couple of extra steps!




2.3kg apples washed and chopped
1.1 litre water
few fresh mint sprigs ( I add dried mint for extra mintieness)
1.1 litres white vinegar
Sugar
6 - 8 tablespoons of chopped fresh mint
few drops of green food colouring for the aesthetically minded!
also consider adding rosemary or any other herb such as sage , thyme, parsley to either complement the mint or instead of it
I like to put a sprig of Rosemary in the jar and pour over the hot jelly to infuse. goes great with lamb - but sage should go well with pork (substitute this for mint in main recipe for an apple and sage jelly)

boil apples and mint sprigs in pan with water till soft and pulpy appx 45 mins add vinegar and boil for further 5 minutes.
spoon apple pulp into jelly bag and leave to strain into large bowl for at least 12 hrs
Discard pulp ( I'm sure Gabriella and Mary will find some artistic use for this???? Maybe addition to clay or something! Apparently the Americans use apple pulp in low fat biscuits instead of butter anyway it will go into the compost I'm sure).
Measure Juice extract and for each 600mls of extract use 450g of sugar (pound of sugar for a pound of fruit) the pulp juice will be a pinky white colour at this stage.
Heat gently stirring until the sugar has dissolved then bring to the boil and boil rapidly until a set is achieved (between 10 and 40 minutes depending on how high above sea level you are)
Take the pan off the heat and remove scum with a slotted spoon. Stir in herb/herbs of choice and any colouring, allow to cool slightly and then stir well to distribute - bits.
Pot and cover


I'm wondering if for a special treat when you make marmalade if you could take a bit off and add the vinegar and thyme to that for a couple of jars to make a great glaze for duck!

Or I wonder what a coriander and apple jelly would be like??? for fish and chicken

I'm thinking you could also use pears instead of apples!
